Meet Me Monday & Monday Made It

Happy Monday to you, friends!
Today's Monday Meet Me is all about Random facts. 
Yes, that worst thing really did happen IN MY classroom. I was so angry about everything afterwards. Can you believe that the principal and some teachers blamed me for the incident because I called the mother about the child's behavior? I had no idea she was going to show up to do that at the school. The day after the child was moved from my classroom and I walked on eggshells every day until I left that school at the end of the year. 
It was a horrible school, horrible administration, and awful learning environment. I am so thankful to be where I am now, such a better place to teach and learn. I still get shaky when I talk to a parent about their children's behaviors. 
OK,  on to happier thoughts.... I could go for that breakfast right now!

My made its are going to be about food, and a picture to show you something in progress. 
We went to a friend's for the 4th of July. They provided all of the food, but I hate showing up empty handed, so I brought some desserts. 
Recently I saw a recipe for a cake and frosting made with rootbeer, I really LOVE the taste of rootbeer; I had to try out the recipe from The Chew

I doubt mine was as good as the chef on The Chew, but the boys gave it a thumbs up.
I wish it had more root beer flavor, but it was nice to have something different. 
I tried it without the icing, and I will be honest, I did not like it as much, the icing was an important component of the flavor. 
I also made some cookies. I went for a s'mores theme. This is a simple recipe and was a huge hit with all of the kids and adults!
How to make: Mix 1 box of devil's food cake, 2 eggs, 1/2 cup oil, 1 cup chocolate chips, marshmallows. Mix all of the ingredients (except the marshmallows) together in a bowl - the mix will be thick, drop by rounded spoonful on baking sheet. 
Bake for 4 minutes at 350. Place half a marshmallow on the top of each cookie and bake for 4 more minutes. Let the cookies cool before removing them from the cookie sheet. 
You can eat them warm or completely cooled down. 
Simple yet delicious! 
I am determined to use my Zoku popsicle maker more this summer and the other day I discovered a great smoothie concoction that froze perfectly. It would also work well in other popsicle trays.
Lemon Raspberry Pop: Mash raspberries with a little bit of sugar. Blend together lemon yogurt, chia seeds (optional), coconut milk. Add the raspberries to the blended mix, and swirl it through. Then pour in the popsicle maker to freeze. YUMMY!
Raspberry, Watermelon, Pomegranate pop: Blend watermelon chunks, POM juice, and raspberries. Pour in to the Popsicle maker and enjoy! (Options: add cherries or cherry juice, or add coconut water).
We are in the progress of re-doing our fireplace and I am happy to report that after a few months of seeing this,
and then a month of this,
we have started the process of building our stacked stone fireplace! Woohoo! 
It is hard work piecing the stones together so they fit just right, and making sure it doesn't look like an amateur did it. 
After a stressful day of "I'm not sure about this," and "These pieces are not matching," and many warnings to the kids to vacate the area, we finally bit the bullet and applied the base layers to the hearth. 

Next step, is placing the stones on top of the hearth, mounting the mantle, then the stacking the walls. I am excited yet nervous. I don't want to botch this project, but cannot wait for the new look! I hope that we are done by next Monday, but I am not going to rush this project.

  2. I think I would be in therapy if something like that happened in my classroom. Poor little girl....and poor you. All of your desserts look delicious, and I'd love a chocolate croissant with my coffee right now.

  4. That's terrible! Poor little girl and I'm so sorry your administration did not support you! You should swing by and check out the worst thing that happened in my room. It was pretty terrible as well!

  5. I want to meet Auggie too! How awesome would he be? I like Root Beer too and that looks yummy! The concoction you used for the Zoku sounded yummy too. I would've been fired for hitting the adults with switches and making them cry. Ahhhhhh! XO
